Weekday Pork and Beef Tacos
After a long day at the farm on a typical weekday, I wanted to prepare a tasty and straightforward meal. We had all the necessary ingredients for tacos, and I knew Robert would appreciate them, too. I named this recipe Weekday Tacos since we did not serve an elaborate spread of rice, beans, guacamole, and chips. It is a straightforward but delicious dish that can be quickly prepared.
Ingredients
- 1 Yellow onion chopped
- 1 Lb Pork and 1 lb beef
- 1 ½ Teaspoon garlic powder
- 1 ½ Teaspoons chipotle powder
- 1 ½ Teaspoons chili powder
- 1 ½ Teaspoons cumin powder
- 1 Packet taco shells, we selected white corn soft shells
- ¼ Cup cilantro
- 1/4 Cup cotija cheese
- 6 Cherry tomatoes
- Hot sauce (optional)
Directions
Preparation - 5 Minutes Cook Time - 15 minutes Servings 4-6
- Begin by chopping a medium-sized yellow onion.
- Next, heat a large skillet on a burner set to medium heat with 1 tablespoon of olive oil. Add the chopped onions, 1 lb each of ground pork and ground beef, and start browning the meat while cooking the onions.
- Add the dried spices once the meat has browned, and cook for 2 minutes to ensure all flavors are incorporated.
- Finally, add some cilantro for a finishing touch.
- Place the corn tortilla shells individually onto a burner set to low heat to toast them. Once toasted, keep them warm in a folded dish towel.
- Now, it's time to assemble your tacos as you please. We recommend placing the taco meat into the shells and topping it with a few cilantro, halved cherry tomatoes, a dusting of cotija cheese, and a dash of hot sauce. Enjoy!
